First things first, get that shredded chicken ready. If it’s cold, give it a quick zap in the microwave for 30 seconds or so. Then, in a medium bowl, toss it with your favorite BBQ sauce and a generous drizzle of hot honey. I usually eyeball it, adding enough sauce so the chicken is well coated but not swimming. Remove the cooked quesadilla from the pan and set it aside on a cutting board. Repeat the process with the remaining tortillas and filling.
